Desert Mallee, also known as Eucalyptus concinna, is a tree endemic to Australia. Collected from the trees in the red ochre soils of Western Australia's historic Goldfields district.
This honey, in taste and colour, embodies the harsh extremes of the desert environment it's collected from. Droughts, fires and hot summer days are what these Desert Mallee trees survive to still be able to produce the sweet nectar our bees collect.
A great tasting honey with strong intensive flavours and a lot of history!
The Jarrah Tree (Eucalyptus marginata) is native to Western Australia and grows in the rainforests stretching from Perth to the South West. With a unique flavor profile, it is considered to be one of the most valued honey’s in Australia due to the ever dwindling forests that it originates from. It has a nutty malt flavor and an amber color. Recent studies have shown Jarrah to contain 2-3 times the amount of anti-oxidants compared to Manuka Honey, higher anti-bacterial activity as well as boasting skin repairing properties! A real super honey.
Dryandra, also known as Parrot Bush, is a unique species of Banksia native to Western Australia. This fascinating plant thrives in the region's diverse ecosystems, showcasing striking flowers and a delightful floral and mildly fruity flavor. Perfect for enhancing pancakes and waffles, Dryandra also plays a critical role in supporting local wildlife, providing nectar for birds and other pollinators.
A brand new addition to the Elixir family, this Firewood Banksia is bursting at the seams with flavor. Each spoonful is a testament to the rich heritage and natural beauty of Australia's pristine forests. From its delicate aroma to luscious texture, this is a must try for the raw honey fans out there!
